Declan is the owner of the Cosy Cottage Restaurant in Moville on the east coast of the Inishowen Peninsula. He currently employees fifteen staff.
He has a very good purchasing policy buying as much as possible locally and trying to minimise waste packaging.
He has developed a comprehensive environmental policy, with particular attention to the kitchen and staff practices. All lights have been replaced with Class A alternatives, He has recently purchased staff uniforms that are type 1 eco label. He no longer uses single portion food items and already has noticed significant savings.
